This press (on left) pressed the oil out of the crushed olives coming from the crusher. Pipes at the bottom took the oil to the pump (lower center) where it was mixed with hot water and moved into the two storage vats at upper right. There the oil and water would separate and the oil would be drawn off at the device on the far right.
